I just made burgers on the George Foreman grill (I would thank the person who got it for us for our wedding, but I'm not sure which 1 of the 4 we got it is! haha). Also made a fresh pot of tea...our favorite. Now we're full and sleepy and ready for a restful night!
A few nights ago Eric and I played Monopoly at the dinner table...and I got beat. Bad. haha. I always start out great, and then Eric builds an empire with the expensive properties and crushes me every single time I go around the board, haha! I always get the purples and the oranges and do pretty well with them, but they can't stand up to those greens, and of course, Boardwalk! I ended up having to mortgage all of my properties, and make a couple of deals ;) with my opponent, ha! I beat him in the game "Battleship" every time though!

It's an absolutely beautiful night out tonight! The temperature is down a bit, and the sky is full of these amazing dark, fluffy clouds! We just made a little trip downstairs, Eric armed with his flashlight, because we spotted some furniture out by the trashcan. It was an entertainment center. But after looking it over, we decided to not adopt it. The shelves were mostly missing and it was not so pretty. So if anyone in the Edmond area needs one...there's one out in our parking lot! Save the Earth....reuse, reduce, and recycle!
AND on a sweeter note....we made homemade sugar cookies last night! In a dark kitchen still....the maintenance finally came in today and replaced all of the bulbs, now we have light! But last night was fun, and after regretfully eating 3 cookies, I was ready for bed! We always bake a sheet of them the way Eric likes, and then a sheet the way I like. I prefer my cookies a little undercooked, where they are soft and gooey in the middle still! Eric doesn't so much like the gooey. We didn't shoot any photos because the kitchen was so dimly lit they wouldn't have turned out much.
Sugar cookies remind me of, who other than, Grandma! We used to make them at her house (she was so brave to let 3 little kids in her kitchen with flour and dough!). I remember in the beginning, us helping her make them from scratch. It was a mess...and I remember it being so so fun! I always liked baking, so I had a blast. Then I remember going to their house one day, and us getting the grand idea to bake cookies again. Grandma just smiled and pulled a big roll of cookie dough out of the freezer (which she had already made, rolled in wax paper, and had frozen for when we came) and letting us slice the cookies and put them on the cookie sheet. She was smart to prepare the dough before we got there....to save her kitchen and her sanity! haha! Smart woman!
It may appear that we bake cookies and sweets a lot, and it's because we do! Eric and I both have a bad sweet tooth...and we haven't yet hit the age where your metabolism slows down and you can't just bake cookies every other night, so we're enjoying this season of life. Filling it with the things we love while we can :). Cookies and cakes and brownies, oh my! And some of my favorite times together, are times spent in the kitchen. I love making goodies together, so we'll do it as long as we can! We always have a lovely time (and I still make a complete MESS of the kitchen) and then Eric does all the dishes, and I wreck it again!!! What a blessing :)
We're looking forward to going back home for a little while next week. Spending some time with family and friends that we don't get to see too often! Can't wait to see everyone, we love and miss you guys!
