The best things in life are free....or chocolate, haha! After a long day, the chord struck me right and I decided to hop in the kitchen (don't worry, Eric did the dishes so the disaster zone was not such a disaster tonight) and whip up a batch of no-bake cookies! It's way too hot to be running the oven, so this was the perfect thing to satisfy our never-ending sweet tooth.
Half way through making them, enters Eric headbanging his way into the kitchen to Trans Siberian Orchestra's Canon of the Bells (Yes, we listen to Christmas music ALL year 'round. It's Jesus' music...CHRISTmas music...see?! :) ). So, I took a minute and we danced it out in the kitchen, and then I went back to the cookies.
I've also been burning my Mulled Cider candle as of late (which is my holiday candle) because it puts a smile on my face. For those of you who don't know, I am in love with the holiday season. I want to live somewhere where it is winterty most of the year, and I can bake cookies and cakes, and we can have the fireplace going everyday to keep us warm! I love the family time and the laughter and singing. It's the best. Everyone is more lovey during the holidays.
Anyhow, the cookies turned out great, and now i'm ready for bed. Did I mention that there is nothing better than opening a new jar of peanut butter? I love the untouched perfection of the top of the peanut butter, right before you dip your spoon into it. So lovely. (p.s. thanks Mom for the PB, you keep us going :) ) Also, another sweet little thing, the recipe I have for these fudge no-bake cookies, is from 10 years ago ( ahhh! I feel old, I can say that I have something from 10 years ago, and I remember it! haha) from my 8th grade Home Ec. class with Ms. Gunter (who also taught my mom). The recipe was mom's that I copied down, in my 8th grade handwriting, which is not pretty to say the least, haha! But it's the same one that I always use, and I love that everytime I look at it, I have a sweet little memory to go along with it.
I've blown out my candle, and turned off the stove. And if I listen verrry carefully, I think I hear those new clean sheets (chocolate colored, of course) calling my name!

Fudge "No Bake" Cookies
2 c. sugar
1/2 c. cocoa
1 stick butter
Mix together in pan. Boil by clock 1 minute. Remove from heat.
Add:
1 tsp. vanilla
1 c. coconut
1/2 c. peanut butter
3 c. quick oats (thanks again, Mom)
At once, while still hot, drop by spoonfulls on wax paper. Let cool. Serve.
